Oysters on the Half Shell with 8 Brix White

Ingredients
1 dozen fresh oysters, shucked and on the half-shell
6 tsp 8 Brix White
1/4 apple, finely diced (optional)
1/2 shallot, finely diced (optional)
Rock salt
Method
Line a platter with rock salt. Arrange the oysters, in their half-shell, on the rock salt
Pour a half teaspoon of 8 Brix White over each oyster.
Mix a very fine dice of apple and shallot, and place a teaspoon of mixture on each oyster.
Garnish the serving platter with shredded seaweed (nori) and dulse (red sea plant similar to green seaweed).
