Minus 8 Vinegar is named after the temperature at which the grapes are harvested. Made from at least 8 varieties of ice wine on a Canadian vineyard, then aged for years in French oak barrels, this intense and unique ingredient is now available to at-home chefs.

Take ripe cool-climate Riesling grapes, pick them, dry the Riesling on racks for months in a climate controlled environment until they become raisins, then press them to get each drop of sweet juice. Make wine, called Vin de Curé (similar to Amarone.) Make vinegar with a specialized culture. Result: Dehydr8! Tastes like raisins, apricots, dried apples, sweet, sour with dried floral aromas and it's deliciously sippable as a digestif or in a cocktail (think of a Manhattan with Dehydr8 instead of bitters.)
Ice wine vinegar named after the late winter harvest, L8 Harvest tastes exactly like ice wine with the element of vinegar: rich, fruit driven, sweet and crisp, balanced with acidity. This is made with mostly white Vidal grapes which are wonderful for ice wine, and some red grapes for a little tannin and depth of flavor. Very versatile for sweet, savoury and cocktail applications.
8 Brix is made from the juice of premium vinifera (wine) grapes literally chosen bunch by bunch, hand-picked and pressed in small volumes at five intervals between August and January. Unripe and green in August through ice wine ready in January. Each ripening stage introduces a distinct flavour profile that blends seamlessly into the next. Sweet and sour pure juice.
